The forms on our website are not going to our e-mail when they are submitted. How do I fix this? There have not been any changes made to the forms they just stopped working. How do I fix this?

Things don't 'just stop working' and you give no clues about what version you are using or the page URL. If it wasn't your web site it must be your hosting company.
For example, did they upgrade the version of PHP on your server? If that is what happened, check the version you specified in the form designer and update it if necessary then re-publish the page.

Usually when sometime suddenly stops working then the web-host has change something.
Your webhost should be able to tell you why the email is not sent and based on that information you can modify the settings of your form.

Note that usually the webhost first blame the script. However, because this has not changed, it must be somethinh else that has changed.

I went back to a previous publish/back up that worked to send the emails, and that did not fix the issue. We have tried a different email and looked up every instruction possible. Last Monday the forms could be submitted and were being received in our email. Now they are not. I have not changed anything but now they do not work. I've talked to the hosting and they said they haven't changed anything, however the issue has to be somewhere between Quick and Easy or the hosting, and I am not sure what else to try.

Did your host tell you why the emails are not sent?
Only they can find out what is work because the emails are sent by their server.

Note: if you did not change anything then it cannot be a software related issue.
The script does not suddenly change on the server.
